Step 1: Finely grate potatoes, garlic and onion into a large bowl. Drain off any excess liquid.
Step 2: Add an egg, salt and black pepper and squeeze the excess liquid again.
Step 3: If needed add a little cornstarch and mix well.
Cook Potato pancakes
Step 1: Heat olive oil in a skillet, divide pancakes into 6 equal pieces, and cook 3 at a time. Cook on each side for 4-5 minutes or until crispy.
Step 2: Transfer pancakes to a plate lined with a paper towel to drain.
Make tuna salad
Step 1: Open canned tuna, drain excess liquid and transfer into a bowl.
Step 2: Dice onion, speckled gherkins, and fresh parsley.
Step 3: Add Greek yoghurt, salt, and black pepper to the tuna mixture. Combine with diced onions and parsley and mix well. Adjust seasoning to taste.

1 can of Tuna
80 grams – Red onion
5 grams – Fresh cilantro
60 grams – Pickled gherkins
